Luck of the Irish


Happy St. Patty's Day! 

Every year my family loves to celebrate their Irish roots with a traditional Irish meal. This year I thought I would have my mom teach me how she has perfected this amazing meal and I thought I would share it with all of you. A meal this lucky must be shared. ;-) 

Ingredients:

-Flat cut corned beef (Please note: usually comes with a spice packet to add, if it doesn't- you will need about a teaspoon of salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, ground cloves, allspice & crushed bay leaves)
-bag of baby carrots
-1 medium head of cabbage quartered
-4 or 5 potatoes peeled cut into fourths
-1 small onion chopped



1. Corned beef usually takes up to 4 hours to cook, so always allow yourself plenty of time. Rinse the corned beef off and place it in a pot with water. Add the spices. Bring to a boil but lower once to a shimmer once the waters hot.
2. Skim the water if necessary
3. Place all vegetables (except the cabbage) in the pot 45 minutes before the meat is done, cook for 25 minutes then add the cabbage. Finish cooking for the last 20 minutes.
4. Serve with mustard or horseradish
