Kiss the Cook, She's Swedish! {Cooking Post}

I absolutely LOVE breakfast for dinner! Swedish Pancakes are definitely my favorite when it comes to breakfast, so I decided to make this delightful treat for my husband, David, last week!

My great-grandmother, Mimi, used to make these for my grandmother, June. My grandma June used to make these for my mom and my aunt Joanie when they were growing up. My mom and my aunt made these for my cousins, brother, sister and me when we were growing up. So this recipe has been passed down generation by generation. When my mom would make these for us, she would have to make several orders because we could eat them as fast as she would cook them. I will someday pass this recipe down to my kids and keep the family tradition going. Enjoy!


Swedish Pancakes

Pancake:
1 cup water
2 eggs
3/4 cup flour
pinch of salt
2 tablespoons sugar

Filling: 
applesauce
ground cinnamon
sugar 


Whip above ingredients together. Melt butter in non-stick pan and pour small amount of batter into pan. Cook over medium heat- turn over and cook the other side.

Filling: Heat up some cinnamon applesauce. Spread over pancake and roll up. Top pancake with with a dab of butter and sprinkle lightly with cinnamon & sugar.

Yummy in my tummy!
